3/4" ply is what I used.

I used 2'x2' squares of MDF and some 2x4 s for the deck and those orange fiberglass driveway markers cut in half for the rods.

you must be careful of MDF as when it fails and it will it is often catastrophic . I made on with it once the stress exceeded the support the corners broke. Plywood is the better option. When you think about it 20 sticks at 10lbs is 200 lb.

I was thinking of 2' x 2' x 3/4" plywood doubled up for both the top and bottom. Does that sound reasonable? So 1 1/2" thick for the top and bottom of the go-bar deck.

Unreasonable. 1 1/2" thick is overkill. 3/4" is plenty.

I guess I'm just trying to point out my confusion. You say 3/4" is enough yet Stewart McDonald says to use 4 layers of 3/4" plywood for their go-bar deck bottom and 2 layers for the top. I will say that NOT ALL PLYWOOD IS CREATED EQUAL.
get a good cabinet grade and one 3/4 in layer is all you need. I use baltic birch myself.

However, I think if you use a GoBar to do a glue-up that will distort a 3/4", 2'x2' piece of ply you're doing something way wrong.
