A radius dish and a concave workboard.

Interchangeable or would one be used instead of the other under certain circumstances?

Work boards are a different methodology . I have made and used both but could never figure a method to make the disk interchange with the work board.

When would one use a workboard instead of a radius dish and vice versa?

work boards are often used on classical . Also when you are using a spanish heel.

Assuming we're talking the same thing here, I have both. I prefer to use a radiused work board to do glue-ups and work on though as I'm limited in space. But, that's a personal preference.
