The final fitting , if you use 320 grit it can get perfect. Joe Cowley was here this week for me to help him set his neck. I hope he posts some pics , it can out very well.
Take your time. You will soon master this task

We are going to redo the dovetail video in a few weeks . Let me know what details you think needs to be made clearer? We can address them at that time
It would be helpful to see when you glue the neck to the body. Where do you put glue....how much pressure you put on....how you close the gap. Glue under the FBE?

when you dry fit the neck , and clamp it you should see things close. If you need to take a bit off the tenon so be it.
One thing often on the first few is that the area may not be flat. Dry fitting and clamping everything down will tell you everything and where you need to make adjustments. Glue surface is the tenon and extension . You can use glue on the cheeks of the heel to act as a filling agent.
