3 vs 2 piece back

If I am harvesting my own wood then it seems the biggest problem is finding a wide enough piece for a 2 piece back. so wouldnt a 3 piece be easier?
If so then why are most handmade guitars 3 piece?

First off , if the tree was small you will have to make it with what you have. When I look for wood I would use a tree under 24in Till you trim the heart and sap you have about 8 inches. You also need proper seasoned wood, too green and you will have a nightmare.

can you send pictures ? I have done a few local woods , sycamore , walnut , cherry and catalpa.
