I've had no issues thawing out and using HHG after several months in the freezer.
Don't believe everything you know.

The glue could deteriorate after repeated reheating, if you overheat it. Just make sure it's not above 150-155°.

Here is a video that shows some neat tricks with gluing soundboard bracing using hot hide glue. The one I like best is putting the glue in small bottles. Dispensing this way is less messy and wastes less glue than when I used a brush to apply the glue. The relavent part starts around the 14:00 mark.
