need to pore fill

I am on my second guitar. The first was maple, so needed no pore filling, the second is mahogany and I am ready for finishing. I have an early 70's EIR Martin 000, and I never noticed before, but when you look across the back or sides, you can see the pores of the wood slightly indented in the finish.
So did the finish shrink over the years? Did Martin use a pore filler at that time? I know that filling pores is just cosmetic. but what is the history of this practice? Did they fill pores before lacquers?
