One-piece backs and tops?

The previous thread was about cherry, and about all the useful information on this forum, and it reminded me to post this question. I have had a small Sweet Cherry (Prunus avium) log sitting after we took down a volunteer tree in our yard. Almost three years later I just had it milled into one-inch planks. Some of the middle boards are well-quartered and wide enough that I could get a few one-piece tenor ukulele backs out of them. Does anyone have any advice about doing this (or not doing this)? I have also seen one-piece sitka spruce tops available near here, and wondered if anyone has used one, and if it would be treated differently, e.g. putting the wider or narrower grain towards the bass side? I've seen the big spruce too. They look interesting but something seems off about it. Good question. I think a one piece back might be a better place to start for me.
