In your video for setting up side geometry, towards the end of working the top you use a dish to create the 1-1/2 degree angle at the fretboard extension (after using the 28’ dish). Do you do this with the flat dish or the 28’?

The 28' radius will give an angle very close to what is needed. I use the 28 foot radius dish or a 30' dish. To avoid the angle being too steep I radius and then flatten the center of the transverse brace.
There is an alternative methods where the upper bout is shimmed up and a flat dish is used to sand in the angle. An important point is not to mix and match procedures or life can get very confusing.
