I went with the Behlen vinyl sealer and stringed instrument lacquer.
Do I seal the spruce top also?

yes you seal EVERYTHING but you don't FILL everything.
sealing is a base coat for the lacquer. I usually seal the top just before I stain.

If you haven't already used dewaxed shellac I'd highly recommend giving it a try as a sealer. It's very easy to work with, dries almost instantly and you can use any type of finish over it. They sell amber colored shellac which adds a bit of warmth to a new spruce top without making it look like toner. A luthier's best friend IMHO. Especially on spruce tops.
