Does Martin Make a 12 String Kit?
How would I set it up for a pick up

I can speak to the pickup part of your question.
I recently completed a 6-string Jumbo, and installed K and K pure Mini pickups in it. These are under-saddle pickups. There are, for a 6-string, three little pickups that are positioned precisely by a plastic template and a golf-tee (clever setup actually) through the peg holes, and super glued to the bridge plate. A prepared cable then leads out to the jack, which I chose to install in the tail wedge. The last "nut" that you screw onto the jack is a combination eschutcheon and strap button. The pickups sound great. The guitar was a gift for my godson, and I presented it to him just before his performance at a fundraiser. Took a great deal of confidence on his part that i had done it right, and tested it before i presented it, but, without question, he played the new guitar onstage. It sounded fabulous.

I also own a D12-28 and have since then built a copy of an old Stella 12 - here are all three

You seem pretty certain that you want a Martin kit and that you want your guitar to be a dread. May I ask why? Have you played them - if so which one(s)? How do you play and how will you tune it? What is your building experience? There are lots of things to consider with a 12 string and I'd be happy to share my experience.
I'll also second the K&K Pure Mini - it is relatively inexpensive, easy to install and sounds good (I just put one in a new HD28 and everyone was impressed by the separation and natural sound). If you are sure you wanted to use the Mini you might consider gluing the transducers to the bridge plate while you have the back off - its not hard but that would make it a little bit easier.
