Does Walnut act different from sitka spruce and rosweood etc

OK, I have this Martin kit with walnut back and sides. The wood quality seemed perfectly fine for the sides. Now that I braced the back and started cleaning out the glue and sanding the wood I have to discover the wood a) has quite some little splitters standing up like hair (bottom picture) b) when I sand it the color really changes from nice brown to more white-ish (centre picture) and c) the residue or the sanding leftovers are rather odd like cloth, not the typical fine grains.
Does Walnut act different from sitka spruce and rosweood etc? (I had no such experience with those woods)
I dont really know whether to just continue this way or what to do. Does anyone have any ideas and tips?

Have you applied any moisture to the wood? If so, perhaps the wood has not yet dried.
Your sanding results seem typical of sanding moist wood.

no, it's just the way it came a few weeks ago. my workshop is also not very moist. all the other woodpieces are fine. any idea what to do?

Does the sanding remove the raised grain? If so, there should not be a problem.
You might want to try using a scraper or maybe a coat of sanding sealer would help.
If the sanding results in more raised grain, I'd contact the seller for a replacement.

Well it does somewhat go away but not really great great. Also, you do see the cloth like residue and I agree it reminds me of maybe some moisture.
I'll try a little more. Thanks for your help!

What grit are you sanding with? Looks like you are using rather coarse paper from the pictures. Finer grits will leave a Better surface. Looks typical for rough sanded walnut.

try using 80 or 100 grit
also scrapping leaves a pretty surface.

It did actually get worse with finer paper. This here was 220.
