What to do with head and tailblock after glueing to sides

Hello, so this is my first kit and its a Martin one.
The Martin manual told me to leave head and tailblock protruding over the back side when glueing them. As I thought it looked really high I did take some off the tailblock by sawing it a little before i did attach it, but still there is some protrude. Now I am wondering what to do!? Run them over the radius dish 'till they are level with the sides? Take them off with a rasp?
i just cant seem to find any specific info as to what the hight of these blocks should look like (also regarding their funktion of gluesurface for top and back) and how to get there.
I appreciate any suggestions, links, pictures!
Thanks a ton!
