Opening the dovetail mortise

Embarking on my first dovetail. What is the best way to open the mortise that is covered by the sides. On the M&T I've done I used a flush cut router bit.

I am not sure what the best way is ... I used a razor saw and a chisel after I cut the binding channel.

If you have a dremel, you can use the sanding bit as well.
