It is the same as Weld-On?
You've probably seen it as Gorilla Glue but there are other brands now. Messy stuff...

CA will work for this as well, but get the usual protection and have a fan running.

I have been bending wood binding with purfling for over 10 years without a failure. I have used CA most of the time . Tite bond , Fish all worked
You don't need as much heat as with a side as the wood is smaller so the thermal load isn't as sever.
Poly glue is a mess and if not done right will leave a glue line. What ever method you choose , run an experiment first
