I've done that on a couple of my guitars that live in India. The high humidity caused the top to rise. I just planed them down. Of course you can only go so far down. If you have 1/8"of saddle in the slot and no more that 1/8" out your okay. My bridges start out at 3/8" thick and I have 1/8" of thickness at the bottom of my saddle slot.
