What to do with old shellac?

I have several mason jars of dissolved shellac solution that's beyond this usable shelflife. I'm wondering what to do with it now. I need some for a "Spit coat" in order to do some routing for a rosette in a spruce soundboard. Can I use the old stuff for that or should I just pitch it?

Speaking of which, what is the proper way to disposable Shellac like this? Do the same procedures for disposing of old paint or motor oil apply here? Namely, saturate old kitty litter with it?

Don't use it for anything that will have finish applied over it if it has gone bad. Have you tested it or are you just using an arbitrary time limit? To test spread a thin smear on a piece of paper, if it dries in 15 minutes it is likely still good.

Disposal can be done just the same as any other coating material.
