Sides in mold-think I screwed up
Is it fair to assume I've ruined these sides?

yep, if that is your tail end, you'll most likely be putting in an endwedge, no problemo!

It's the neck block, but I think I can still inlay a strip of mahogany. It might be slightly visible between the back binding and the heel cap, but maybe not. I guess the thing is getting the block in right with the visual mis-cue. It's pretty bad when you screw up the FIRST THING in your build, huh? I should probably let it acclimate a couple more days, but it was twisting a bit so I wanted to get it in the form ASAP.

your can make a filler piece but as all are saying , your tail piece will hide that and the block will give you all the support you need.

You're going to cut away 3/4 of that seam for your neck mortise/dove tail anyway so just fill it with a scrap piece of back strip and if it's visible between the Back binding and heel cap it will match up nicely.

Even on the neck block - the heel, heel cap and binding combination can cover that whole gap.

If it doesn't, I have used a layered heel cap just cause the owner wanted it, but you could build it up to meet the binding, or flush with the edge....

I have to disagree with your comment about screwing up the First thing in your build. Its a bummer at the time but believe me when you are finished this build you will look back and say with a smile --what the hell was I worried about back then? I know this because i experienced all the emotions you are probably feeling and more with mine. At least you dont have a big hole in the top!! My router slipped and jumped right into the top causing a nice hole and i was devastated at the time but found a fix and I dont even think about it now. And several other little things as well but all got rectified. Always remember --these are not mistakes---only possibilities !! What can I do to rectify this is always the remedy. And you WILL find a remedy !! Best of Luck from Ireland
