Chardo, in my opinion Sapele makes a wonderful guitar. The pictures is of an OM sized crossover I made that takes nylon strings.
It is beautiful under the french polish and sounds great.

You can find some nice quilted Sepele, way cheaper than quilted mahogany.

I agree with Kevin and John; sapele looks good and is a nice wood to work. I think I paid about $15 a set for this...

I have quite a bit of scrap from a job. some 4\4 and 5\4 but nothing big enough for a back. May a three piece back.

I cut my sets from a nice quarter sawn billet I think I got 5 sets and paid $150 for the billet.
