Is there any reason why I couldn't turn a dovetail joint into a bolt on joint by putting bolts in through the neck block and not gluing the joint ??

You might do better if you changed the dovetail to a straight mortise and tenon, but I'm not at all sure how one would go about doing that. I think you would have to fill in the cutout in the neck block in the body, fill in the sides of the dovetail with tapered wedge-shaped pieces, then cut the mortise and tendon.

I'm doing a mortise and tenon bolt-on neck on the Regal mandolin overhaul, but I wasn't starting with an existing dovetail joint and I'm carving a complete new neck.
