I'd like to remove and replace the rosette on a guitar I'm rebuilding. It's an old Yamaha 12-string. How do I go about that?

You can see what it looks like pretty well here-https://reverb.com/item/616660-yamaha-f ... MhQ&pla=1- mine doesn't have the pick guard on it.

chances are you may cause damage.
you have to take the neck off first then try removing the rosette but taking out the middle of them first the hope you can pull the rest out without harm .
it isn't easy

This may or may not be a good idea, but what I would probably do is make a plug for the sound hole with a 1/8" dia. center hole for the pivot pin of my router's circle cutter attachment. Then I would use the router to cut out the old rosette.

I did this with a top I made, using the technique that you're going to use. First and foremost, anchor that top well. I made the plug, found center, and I thought I had the top anchored. As I routed, it started spinning on me when I was half way around. Also, the top under the rosette was so fragile that it came apart in a couple of places.

I had the advantage of a new, unbraced top. I can't imagine doing this with braces in place. I was able to do it, but it was touch and go.
