Nice video and idea for getting the shape copied! On the subject of necks, (maybe you've done this already) it would be of interest to have a video on how to carve the back of neck/head/volute area. I notice that Martin models this area with some variability. I've done two so far with good results, but it is really intimidating. Seeing others' approach would be good.

Great video John! I have a Martin with a low oval I like and this help out! I'm wondering, how thin can I go on the profile without the neck snapping under tension?

It depends
I have not seen strings snap one but I have seen truss rods go through
I will post some neck specks later I have them somewhere
