hello from South Carolina, I am just south of Charlotte NC and 70 miles north of Columbia. I stumbled upon this forum looking for the answer to the age old question titebond or hide glue... I am building a set neck kit not very much assembly and my other future project is to make my Epiphone SG a 25" scale . and I am looking for guidance in the finishing department....

I like to use Fish glue but HHG or Tite Bond will work just fine. HHG was used in the old days so it is your choice so that if you want to use traditional methods HHG is your glue.
What is the wood your using? Most woods will need a filler. Do you have a spray booth or are you planning on doing this outside. I am sure someone will be happy to steer you in the right direction. I use Nitro and use Pore o Paw filler on porous woods Wood like Maple and cherry won't need a filler.
I also use vinyl sealer. My process is stain seal fill finish.
I will shoot about 8 to 10 coats about 45 mi apart
allow to cure
depending on the brand this may be a 2 to 3 week wait
then level wet sand
shoot thinned top coat
level and polish.

Welcome to the forum.

Ah yes, finishing....it is a whole different discipline than the woodworking aspect of things. First decision is what type of finish do you want on the instrument. Then you can find a material and a schedule to fit your needs. Or in the end you may decide to farm it out, depends on what you want versus what you are comfortable doing.
You never know what you are capable of until you actually try....
