new here tuning the top and back of an arch top

I am brand new here and I am in research mode to build a Bennedetto style arch top. I wonder about "tuning" the top and back. It seems to me that I do not/cannot know what to listen for. Are there any builders in Los Angeles that I might consult with on this subject?
