HHG Denature

Does anyone know at what temperature hot hide glue denatures? I know optimum temp is 145°, but when does it actually start to denature?

Lol. Thanks Ed. I've been using a rival hot water pot. I cut the lid so I can suspend a jar in the water. It has a nice rheostat temp adjustment, and I can usually keep the glue at 143-147°. But a little metal piece came off, and I'm sure it was the temp sensor.
