I vote for curly Koa if you want an elegant look, and curly maple if you want a bit more contrast, with class.

I say go with EIR bindings separated with a single black purfling line on the sides to separate the binding from the sides and anything you want for the purfling on the top and back. It will be elegant and simple. You better get some EIR binding that matches the body wood really well though!
