there is one advantage to a dovetail and that is the joint is its own mechanical device. On a bolt on you are relying on the bolt as the mechanical fastener . Without the bolt , the joint will fail. The glue is in shear to the sides of the neck block. if you glue it in and if you only have a single bolt I suggest also gluing.
A dovetail has its joint faces in compression . It is a sturdier joint . I will concede that usually the glue will be enough to hold things in place on both joints and once the joint is frozen with the glue there won't be a real sound difference. I doubt anyone can hear a joint difference . Also there are different bolt on necks. As a traditionalist , I just love the dovetail. Builders that I look up to still use it and I have had customers tell me they won't but a bolt on . Henderson , Dudenbostle , Nichols all use the traditional joint. I think it shows a higher skill level . Yes I know Taylor uses a bolt on and had been very successful with it.
Most people do tend to go with what works best for them . There is an engineered advantage to a dovetail as a load bearing joint over a bolt on .

Thanks, no water for this guitar though lol. I'm really looking forward to the varnishing process, Bruce Sexauer gave me really thorough instructions. To anyone who has used the stew Mac bridge bolts, how are they? I want to have the guitar strung up in the white to show Ervin somogyi at woodstock and those bolts seem like a great way to have it ready.
