Yes, I personally would glue in extra wood and sand back down to the level of the rim. I want good contact between the back/top and the neck/tail blocks so the glue holds well to minimize neck block rotation.

Going from a radius stick to a radius dish is a quantum leap in getting the shape of your rims right. Unless you support the pivot point of the stick at a fixed height, the geometry will be all over the place. You may have the angles right, but its not a true radius.
Bite the bullet and either make or buy a real radius dish, you won't regret it.
