I see where John's two Parallel bars that he uses in his videos are of metal. And he states that they are made to be the same.
My question is how High should they be 1/2" 3/4" or what and also why can't you use 3/4" wood cut from the same piece of wood??? Is it that curture to be that accurate??

If you wvant steel ones, there are any number of sources and prices. High precision sets can cost several hundred dollars, which would be pointless for this use. Most parallels tend to be fairly thin, 1/8" or 1/4", which you probably don't want either. You can get 1/2" thuck ones, but they asren't as common.

I'd be inclined to make a pair out of some very hard dense wood, lignum vitie maybe.

Are parallel bars the same as winding sticks?

not really parallels are used in machine setup and tool making to assure that what you are doing is square and even
