Binding Jig/machine

is a Binding jig made to cut the slot for binding because the guitar is curved and it causes it to follow the contour of the body?

Yes. The goal is for the binding to be parallel with the sides. Because of the radius of the top and back, the router bit would "lean inward", causing the binding to stick out at an angle. The jig keeps the cut parallel.

I just finished a ladder braced copy of a J-185 with an actual flat top, and it was treat to be able to cut the channels without thinking about all this

Ain't that the truth! Lol. There are true flat tops that don't require the jig.

I find that most tops can be done easy enough without the jib it is the back that needs it.
